Located in a field in the Quebrada Honda area, two kilometers from the Llanquihue waterfront, this 120-square-meter restaurant, located in an old warehouse built by German settlers, is run by chef Francisca Acuña Kuschel, a sixth-generation member of her family who moved to the area from Reinerz, Germany. Its facilities date back to 1850, and the marks left by a century-old stove can still be seen on its walls.
Defined as a family restaurant with an open kitchen and a small dining room consisting of six to seven tables, its offering aims to deliver a true gastronomic experience. To enter, diners must pass through a lush garden, where the aromas of freshly prepared dishes and appetizers engage the senses from the very first moment.
Each day's culinary experience consists of at least two starters, main courses, and desserts, which vary daily. Francisca Acuña cooks according to the availability of produce from her garden, the seasonality of the fruits, and the hunting and harvesting seasons in the Los Lagos Region.
In spring, for example, it's time to harvest potatoes, which are an excellent accompaniment to spit-roasted lamb—a signature dish of the area. Next summer, meanwhile, the vegetable garden will be in full bloom, and in the midst of the berry season, with which you can prepare roast pork ribs with berry sauce or duck with apple mousse.
For all these reasons, Se Cocina is part of the 100K Gastronomic Movement , which is characterized by the use of natural products obtained within 100 kilometers of its points of sale. This is done with the goal of generating sustainable gastronomy in three areas: reducing the carbon footprint, linking production, and highlighting the region's traditional cuisine.
